Spring Bay Distillery is owned and operated by Cam and Suzy Brett on the east coast of Tasmania. Established in 2015 they use a combination of premium Tasmanian barley, rainwater, quality wash and careful selection of casks to produce some fantastic whisky.
This whisky was bottled in 2017, Bottle #6, Cask #126.

Cherry, Plums, crisp sugar, walnut, floral, young wood, orange peel, caramel and a distinct note of Allens lolly bananas!
Medium body, juicy red apples burst forth followed by a sprinkle of cinnamon, white pepper and vanilla, rounded out by delicate floral notes
Long, spicy and satisfying finish. Begins with nutty malt & baking spices of clove and nutmeg which transitions into burnt caramel and sticky date pudding as the finish rides out, delicious.
