Coastal Stone Whisky is distilled by Manly Spirits Co. Distillery. It is an expression of the maritime element & raw nature of the Australian coast, combined with the desire to create a whisky that exceeds expectations.
A refined spirit that respects the Sydney climate, created from grain to glass with no shortcuts, no strict timelines, just premium ingredients with true artisan skill. Captured in contemporary glass, sculptured with the eroded textures of weathered sandstone cliffs that border their coastline & sealed with a truly unique Sydney sandstone stopper.

From an outturn of eight barrels, Manly Spirits’ first edition single malt is finally here. Casks were sourced from coopers in Tasmania and South Australia where they were shaved and re-charred into 100L and 225L formats. The casks were all “first fill” having never had whisky in them before, meaning they provided amazing richness in flavour.
This bottle is from the first release and was bottled in 2021. Bottle 929/1000, Batch #1.

Nose 4.2/5
Dried fruit and spices, sugar syrup, juicy red apple, vanilla malt, candied orange and pomegranate.
Palate 3.8/5
Medium body, dark chocolate, cherry ripe, malt, cinnamon, doughy, coconut, plums and baking spices.
Finish 4/5
Long finish. Yummy chewy malt, maraschino cherries, caramel, oaky, raisins, chocolate, candied orange peel and powdered sugar all mingle together well.
The Verdict
Before i get into the whisky itself, i need to give a special shout out to Vanessa Wilton and the Manly Spirits team for the exceptional attention to detail they put into the packaging of this whisky. It’s by far and away the best unboxing experience i’ve had with whisky, from the sandstone stopper and the textured glass bottle to the wooden, engraved coasters included in the cannister which has a supple leather top, connected by buckle straps to the wooden base. Just opening the cannister to get the bottle out for a dram is so satisfying already, i love it.
Being in my home state, i have actually had the opportunity to taste the newmake spirit as well as their other unreleased whiskies. Their newmake is one of my favourites i’ve tasted to date which speaks to the quality of work David Whittaker and Reg Papps are doing in the distillery and the process they are working with.
I really enjoy their sherry cask release. The nose is my favourite part of it and its packed full of delicious flavours. the texture and mouthfeel of their spirit is great and you can still taste the key notes of their newmake through the cask which i like. This one looks amazing on your shelf, feels great to open and tastes awesome going down, so it ticks all the boxes for me.
If you enjoy this one, keep an eye out for their Bourbon cask and Pinot cask releases to come, because the samples i had of those were incredible.
