The Distillery
Hobart Whisky is a family-owned distillery based in Hobart, Tasmania. They started developing their distillery in 2014 and started producing in 2015. Despite being one of the first dozen Tasmanian distilleries, they flew under the radar for quite a while, and in this time concentrated on making whisky.
Hobart Whisky bears testimony to their Tasmanian malted barley, fermented with style, gently distilled with grace, then sweetly rested in hand selected oak casks. Each small batch holds its own distinctive characteristics and signature.
This whisky was matured in a pair of 100L Tawny Port casks for three years before being transferred and finished for just under two years in a fresh 225L Tawny Port cask.

Nose 4/5
Grassy hay, malt, earthy spices, caramel, dark fruits. After time it opens up some red grape and muscat notes, sticky sweet strawberry jam and crisp sugar emerge.
Palate 4.5/5
Incredible explosion of flavour, wow. Immediately bombarded with red berries and plums. The tawny influence makes itself known here and you can vividly taste it. Woody spices, dark chocolate and maple syrup round out the palate. Nice creamy mouthfeel.
Finish 3.5/5
Long linger, but tapers off notably from the intense palate. Sticky sweet tawny port notes are dominant with maple syrup, oaky vanilla and caramel, with a hint of bitter orange which causes a slight drying effect on the finish.
The Verdict
Gorgeous whisky. The palate is absolutely incredible and that explosion of flavour sticks with you, which is backed by a beautiful and evolving nose. The finish is nice enough but is clearly the runt of the litter compared to the nose and palate on this whisky. Time and water bring this whisky to life, add a few drops of water and let it breathe for 20min or so before diving in, you won’t regret it.
